Stuffed Mushrooms Recipe

Hello Everybody! Today have two stuffed mushroom recipes to share with you all! One version is stuffed with zucchini and the second version is stuffed with crab meat. Watch the full tutorial in the video below or continue scrolling for the written recipe.

Ingredients:

  • 15 white button mushrooms, washed

For the zucchini stuffing:

  • 2 cloves of garlic, chopped
  • 1/4 onion, chopped
  • 4 Tbsp. olive oil
  • 1/2 zucchini, chopped
  • small handful of fresh parsley, chopped
  • 2 small handfuls of shredded mozzarella cheese
  • 2 Tbsp. breadcrumbs
  • salt, to taste
  • fresh ground black pepper, to taste

For the crab meat stuffing:

  • 1/2 cup crab meat
  • 1 Tbsp. mayonnaise
  • 1 tsp. hot sauce, (I used habanero hot sauce)
  • 2 small handfuls of shredded mozzarella cheese
  • 2 Tbsp. breadcrumbs

BBQ Roasted Peppers Recipe

Hello Everybody! Here is a very simple BBQ roasted peppers recipe for you all. This is a perfect side dish or can be used in sandwiches. The weather was really nice today and felt like spring so it made me want to go outside to cook! Watch the video below for a step by step tutorial or continue scrolling for the written recipe.

Ingredients:

  • 4 sweet red bell peppers, washed and dried
  • 2 garlic cloves, chopped
  • handful fresh parsley, chopped
  • 1/2 cup olive oil, extra virgin
  • 1 Oh Yeah Baby (hot pepper), chopped, optional
  • salt, to taste
  • paper bag

Preheat the BBQ at 500°F for 15 minutes and then place bell peppers directly on the rack and roast with the lid closed for 4 minutes on each side. Make sure to rotate the peppers on its 4 sides to roast evenly and to avoid any side from burning.
