4 sweet red bell peppers, washed and dried
2 garlic cloves, chopped
handful fresh parsley, chopped
1/2 cup olive oil, extra virgin
1 Oh Yeah Baby (hot pepper), chopped, optional
salt, to taste
Preheat the BBQ at 500°F for 15 minutes and then place bell peppers directly on the rack and roast with the lid closed for 4 minutes on each side. Make sure to rotate the peppers on its 4 sides to roast evenly and to avoid any side from burning.
