After sautéing the sausage and prosciutto with the garlic and onion, add in the rosemary and hot pepper flakes along with the white wine. While the wine simmers and the alcohol evaporates, begin cooking the pasta.
Add the heavy cream a few minutes before the pasta is al dente. Scoop the rigatoni directly into the sauce pan, add pecorino cheese, and cook for another two minutes for a delicious creamy sauce!
