Spaghetti with Tomatoes and Anchovies

Ingredients
  

  • 8 oz. Spaghetti
  • 12 oz. Cherry Tomatoes halved
  • 2 oz. Anchovies
  • 3 Garlic Cloves sliced
  • Handful Basil Leaves
  • 2 Dried Hot Peppers I use chile de arbol
  • Salt and Black Pepper
  • Extra Virgin Olive Oil

Instructions
 

  • Bring a large pot of salted water to a boil. Once boiling, add the spaghetti and cook as per the package instructions. Reserve a cup of the pasta water.
  • Meanwhile, add a large drizzle of olive oil to a frying pan and heat over medium. Add in the anchovies and sauté for a minute.
  • Add in the garlic and sauté for with the anchovies for one minute.
  • Add in the cherry tomatoes and hot pepper and sauté together over low heat for about five minutes, until the pasta is ready cooking.
  • Once the pasta is ready, scoop it directly into the frying pan. Mix the pasta together with the tomatoes and anchovies sauce.
  • Add a ladleful of the pasta water if it is not saucy enough and cook over medium to high heat for one minute.
  • Add in a few basil leaves, ripping them up by hand, and serve.
