4lbs.Bone-In Chicken Wings and/or Thighswith skin, seasoned with salt and black pepper
4oz.Basil Leavesstems removed
5Garlic Cloves
1tsp.Hot Pepper Flakes
1/2tsp.Salt
1/3Yellow Onionquartered
4Rosemary Sprigs
1cupExtra Virgin Olive Oil
Instructions
Preheat oven to 400°F and place rack in middle position.
Add the basil, garlic, hot pepper flakes, salt, and olive oil into a blender. Blend until smooth and a consistency of a pesto sauce.
Place the chicken thighs and/or wings into a large bowl.
Pour the basil sauce over the chicken and mix until the chicken is fully coated with the sauce.
Add the chicken thighs and/or wings, onion and rosemary to a baking pan.
Place the baking pan in the oven for thirty minutes, flips the chicken over and continue to bake for another thirty minutes or until no longer pink in the center and the juices run clear.
