Garlic and Oil with Anchovies and Capers

Ingredients
  

  • 6 oz. Spaghetti
  • 4 Garlic Cloves sliced
  • 1.5 oz. Anchovies
  • 3 tsp. Capers
  • 3 Dried Hot Peppers
  • Extra Virgin Olive Oil
  • Handful Parsley chopped for topping

Instructions
 

  • Bring a large pot of salted water to a boil. Once boiling, add in the spaghetti and cook as per the package instructions. Reserve one cup of the pasta water.
  • Meanwhile, add a large drizzle of olive oil to a frying pan and heat over medium to high heat.
  • Add in the garlic and sauté for two minutes or until lightly golden over medium heat.
  • Add in the anchovies, capers and hot pepper. Lower the heat to low and sauté for about five minutes, making sure not to let the garlic burn.
  • At this point, the spaghetti is ready. Strain the pasta and add it into the garlic and oil pan. Mix together over low heat and then add in a ladleful of the pasta water. Mix together again. If needed, add another ladleful of pasta water.
  • Serve with a sprinkle of chopped parsley on top and enjoy!
