chicken breast, seasoned with salt and pepper to taste
2 eggs (mixed with a dash of salt and pepper)
breadcrumbs (mixed with a dash of salt and pepper)
2-3 Tbsp. olive oil, for frying
To start off, you want to have your chicken breasts seasoned with salt and pepper. Spread a handful of flour on a dish. Spread the breadcrumbs, mixed with a little bit of salt and pepper, on a second dish. Beat the eggs, with a dash of salt and pepper, in a shallow bowl. In a frying pan, add the oil and 1 Tbsp. of butter and melt over medium heat.
Lightly press the chicken breast into the flour to coat, making sure to shake off any excess flour. Next, you want to dip the chicken into the beaten egg mix and then lightly press it into the breadcrumb mix until fully coated. Lastly, place the chicken onto the frying pan over medium/high heat. Cook on each side for about 2 minutes. Repeat these same steps for each piece of chicken breast. Clean the pan and add fresh oil and butter each time.
Next, add a small amount of butter on top of each piece of chicken breast and bake in the oven at 400°F for 10-15 minutes. Serve and enjoy! Cin Cin!
Served with a side of baked potatoes wrapped in bacon. Potatoes were boiled for 7 minutes and then wrapped with raw bacon and put in the oven at 400°F for about 30 minutes. To keep the bacon wrapped around the potatoes, use a toothpick to hold in place.
