Hello Everybody! Today I am sharing with you my delicious homemade focaccia with olives and tomatoes recipe! You can enjoy focaccia bread for breakfast or on the side of any dish for lunch or dinner! You can top it with a variety of ingredients, but my favorite are olives and tomatoes. I used kalamata olives, but you can use whichever olive is your favorite. Ingredients:
- 3 1/2 cups Flour, all purpose
- 1 1/2 Tbsp. Yeast, dry
- 1 3/4 cups Water, warm
- 3 Tbsp. Olive Oil, extra virgin
- 1 1/2 tsp. Salt
- 1/2 cup Cherry Tomatoes, halved
- 1/4 cup Kalamata Olives, halved and pits removed
- Oregano, for topping
- 3 – 4 Chive Stems
Begin by mixing 1/4 cup of warm water with the yeast. Set aside for three to four minutes.
In the meantime, in a large mixing bowl, mix the flour, salt and olive oil. Mix the yeast again with a fork and then add into the mixing bowl. Continue to mix the dough together.
Add a little bit of the warm water at a time and continue to mix. Once the dough is fully combined and sticky, remove from the bowl and continue to knead the dough on a cutting board until the dough is not too firm or too soft and no longer sticks to your fingers. If it remains too dry, add a little bit more water and continue kneading.
Drizzle some olive oil into a large bowl and then place the dough in the bowl. Add a small drizzle of olive oil on top of the dough and then cover with a lid or kitchen towel. If in a cold room, cover with a large blanket to keep warm. Set aside and allow the dough to grow for an hour.
About ten minutes before the dough is ready, preheat the oven to 400°F.
Once the focaccia dough is ready, add a drizzle of olive oil to the bottom of a 9 x 13 baking pan and a drizzle of olive oil on top of the dough in the bowl. Remove the dough from the bowl and place the dough into the baking pan. Flatten the dough to cover the entire pan using your hands.
Place the chives, tomatoes and olives on top of the focaccia dough. Sprinkle with some salt and oregano. Add another drizzle of oil all over the focaccia dough. Place the baking pan in the oven and bake for thirty-five to forty minutes.
Once the focaccia is ready, remove from the oven. Remove the focaccia from the baking pan and set aside to cool on a rack. Cut the focaccia into your preferred slice size and enjoy!. Salute and cin cin!

- 1.5 Tbsp. Salt
