Zucchini and tomatoes are in season as the temperature warms up here in the NorthEast, making this a delicious dinner to whip up for the family. Try this recipe with your favorite pasta! Enjoy! Ingredients:
- 1 lb. cavatelli, fresh
- 3 zucchini, chopped (to your desired size)
- 8 plum tomatoes, peeled and chopped (to your desired size)
- 1/4 cup onion, chopped
- 2 garlic cloves, chopped
- 1/3 cup olive oil, extra virgin
- pecorino cheese
- hot pepper flakes, to taste (optional)
- salt, to taste
