BBQ Roasted Peppers Recipe

Hello Everybody! Here is a very simple BBQ roasted peppers recipe for you all. This is a perfect side dish or can be used in sandwiches. Ingredients:

  • 4 sweet red bell peppers, washed and dried
  • 2 garlic cloves, chopped
  • handful fresh parsley, chopped
  • 1/2 cup olive oil, extra virgin
  • 1 Oh Yeah Baby (hot pepper), chopped, optional
  • salt, to taste
  • paper bag

Preheat the BBQ at 500°F for 15 minutes and then place bell peppers directly on the rack and roast with the lid closed for 4 minutes on each side. Make sure to rotate the peppers on its 4 sides to roast evenly and to avoid any side from burning.

While the peppers are roasting, mix the garlic, parsley, Oh Yeah Baby, olive oil, and salt in a bowl. Set aside to serve over the roasted peppers later. This can also be stored in the refrigerator for use at a later date.

After about 15 minutes of roasting the bell peppers, remove from the BBQ and squeeze with tongs to drain excess water. Place the peppers into a paper bag, roll up and let cool off for 10 minutes. Remove from the bag and cut the peppers in half. Use your hands to easily peel off the skin. Remove any seeds as well, and place the roasted pepper strips on a separate serving dish. Take the olive oil mix from the bowl you set aside and drizzle a bit of it over the roasted peppers. Enjoy and cin cin!
