The sweetness of the cherry tomatoes pairs perfectly with the salty anchovies in this delicious spaghetti with tomatoes and anchovies recipe. Its simple and quick to prepare, making it a great recipe idea for a hot summer night!
Ingredients:
- 8 oz. Spaghetti
- 12 oz. Cherry Tomatoes, halved
- 2 oz. Anchovies
- 3 Garlic Cloves, sliced
- Handful Basil Leaves
- 2 Dried Hot Peppers, I used Chile de árbol
- Salt and Black Pepper
- Extra Virgin Olive Oil
Bring a large pot of salted water to a boil. Once boiling, add the spaghetti and cook as per the package instructions. Reserve a cup of the pasta water.
Meanwhile, add a large drizzle of olive oil to a frying pan and heat over medium. Add in the anchovies and sauté for a minute.
Add in the garlic and sauté for with the anchovies for one minute.
Add in the cherry tomatoes and hot pepper and sauté together over low heat for about five minutes, until the pasta is ready cooking.
Once the pasta is ready, scoop it directly into the frying pan. Mix the pasta together with the tomatoes and anchovies sauce.
Add a ladleful of the pasta water if it is not saucy enough and cook over medium to high heat for one minute.
Add in a few basil leaves, ripping them up by hand, and serve.
