I love to start my morning with a satisfied stomach. This breakfast recipe starts my day off right with delicious vegetables and protein filled eggs. Video below.
Cook Time: 25 minutes
4 hard boiled potatoes cubed
1/4 cup chopped scallions
1 zucchini (chopped into small cubes)
1 green bell pepper (chopped into small cubes)
1 sweet red bell pepper (chopped into small cubes)
6 eggs (1 egg per person)
2 Tbsp oil
salt and black pepper to taste
You will need an oven safe frying pan for this recipe.
The potatoes were boiled until soft the night before and stored in the fridge overnight. Preheat your oven to 400 degrees. Begin by adding oil to a frying pan. Add the scallions and fry on high heat for about 2 minutes. Next you will need to add the red and green bell peppers to the pan and let fry for 2 more minutes.
Now add the zucchini and lower the flame to medium heat so that nothing burns. Add a bit of salt and black pepper to taste. Make sure to mix the contents of the frying pan. After about 4 minutes, it is time to add the cubed, cooked potatoes. Mix and leave on medium heat for 4 more minutes. Remove from flame and place the frying pan in the oven on the middle rack at 400 degrees. After about 3 minutes, remove the pan from the oven and crack the eggs on top of the mixture.
Place the pan back in the oven. Remove once the eggs are cooked or after about 8 minutes if you like the yolk to be runny. Serve immediately and enjoy it while it’s hot!
