Fettuccine with Mussels Recipe

Hello everybody! Today I am sharing with you my fettuccine with mussels recipe that will have everyone at the dinner table begging for more. It is a very simple recipe, but tastes so delicious! Ingredients:

  • 1.5 lbs mussels, washed thoroughly
  • 1.5 lbs chopped plum tomatoes, boiled and peeled
  • 1/2 cup bacon, chopped
  • 1/2 cup shallots, chopped
  • 2-3 garlic cloves, cut in halves
  • 1/4 cup fresh parsley, thinly chopped
  • 1-2 Oh yeah babies! (hot pepper), optional
  • sea salt, to taste
  • Dry white wine
  • 2 Tbsp Extra virgin olive oil

Begin by cooking the bacon in a frying pan on low flame until crispy. Once the bacon starts to brown, add a few splashes of white wine for flavor. Cook until the wine is evaporated. Add the garlic halves, shallots and olive oil to the frying pan and fry until the shallots are slightly browned.

Next, add the tomatoes, salt and hot pepper, if desired, and mix in the pan. Cook for about 10 minutes and then add the fresh parsley, mix and cook the sauce for 5 more minutes.

At this point, you can begin cooking the fettuccine as per the package instructions.

Add the mussels to the frying pan and mix with the sauce. Cover the pan and let cook on low flame for 8-10 minutes. Make sure to check frequently and mix to incorporate the sauce.

To serve, you can either drain the pasta and add to the mussels and sauce, or you can take the pasta straight from the pot, as I would recommend, with still a bit of water on it and add it to the sauce and mussels and mix. Serve on a dish and enjoy!
