Pasta with Zucchini Recipe

Hello everybody! Summer is quickly approaching and a new season brings fresher produce. Zucchini and tomatoes are in season as the temperature warms up here in the NorthEast, making this a delicious dinner to whip up for the family. Try this recipe with your favorite pasta! Enjoy! Ingredients:
- 1 lb. cavatelli, fresh
- 3 zucchini, chopped (to your desired size)
- 8 plum tomatoes, peeled and chopped (to your desired size)
- 1/4 cup onion, chopped
- 2 garlic cloves, chopped
- 1/3 cup olive oil, extra virgin
- pecorino cheese
- hot pepper flakes, to taste (optional)
- salt, to taste
Bring a pot of water and a dash of salt to a boil. Add the pasta and cook as per the package instructions.
In a deep skillet, begin frying the garlic and onion in the oil over a medium/low flame, making sure to stir occasionally so it doesn’t burn. after about 2 minutes, add the hot pepper flakes.
After 4-5 minutes, add the tomatoes and continue to cook over a low flame, making sure to stir occasionally. Add the zucchini after 7-8 minutes. Add salt to your preferred taste. Continue to cook for 15 minutes or until the zucchini starts to get tender.
Once the pasta is ready, using a ladle strainer, scoop the pasta directly into the zucchini and tomato skillet. Continue to cook over a low flame for about a minute while you are stirring the ingredients together.
Scoop some pasta and zucchini into a dish, sprinkle with freshly grated pecorino cheese and enjoy! Cin cin!
