Ingredients:

  • 1 lbs. ground turkey
  • 4 portabella mushrooms, chopped
  • 5 spoonfuls of tomato sauce
  • 2 eggs, wisked
  • 3 bacon strips
  • 1 garlic clove, minced
  • 1/2 zucchini, shredded
  • 1/4 cup fresh parsley, chopped
  • 1 cup oatmeal
  • fresh ground pepper, to taste
  • salt, to taste

Preheat the oven to 350°F.

**For the ground turkey: I got one pound of turkey breast and 4-5 mushrooms and ground it together using a meat grinding machine.

In a large mixing bowl, mix the ground turkey, mushrooms, parsley, garlic, zucchini, eggs, oatmeal, black pepper, salt and three spoonfuls of tomato sauce together.

Once mixed really well, scoop into a meatloaf baking pan and flatten it out. Pour two spoonfuls of tomato sauce evenly over the top of the meatloaf.

Place the bacon strips on top of the meatloaf for added flavor. Bake for 45 minutes on the middle rack. Remove from the oven and let sit for about 10 minutes to cool off.

Next, place a dish on top of the meatloaf pan and flip over. Slowly and carefully remove the meatloaf pan as it may still be very hot. Now place a serving platter on top of the meatloaf dish and flip again so that the side with the tomato sauce is face up.

Cut a few pieces of the turkey meatloaf along with some bacon and serve. Enjoy and cin cin!
