Hello Everybody! Today I would like to share with you my Sicilian pizza topped with tomatoes and onions recipe! The dough is thicker than a regular pizza and more often rectangular instead of round. It is more similar to focaccia with toppings on it. The best part is that it tastes delicious with your favorite toppings added to it! Dough Ingredients:
- 2 1/2 cups All purpose flour
- 1 Tbsp. Yeast
- 1 cup Water, warm
- 1 tsp. Sugar
- 1 cup water, room temperature
- 2 tsp. salt
- 3 Tbsp. Extra virgin olive oil
Toppings Ingredients:
- 4 Plum tomatoes, skin and seeds removed, cubed
- 1 Sweet onion, sliced
- 6 Anchovies
- Extra virgin olive oil
- Sea salt, to taste,
- Black pepper, to taste
- Breadcrumbs
Start by adding the yeast to the cup of warm water. Mix well using a fork and set aside. In a large bowl, add in the flour, sugar, salt, and olive oil. Mix the yeast mixture again and pour it into the large bowl. Begin mixing the dough by hand.
Once the dough starts to thicken, pour in some room temperature water. I added about 1/4 cup of water. Continue to knead and fold into itself until the dough is not too firm or too soft and no longer sticks to your fingers. If it remains too dry, add a little bit more water and continue mixing.
In a small bowl, drizzle some olive oil on the bottom and place the dough on top. Drizzle some olive oil on top and cover with saran wrap. Place a thick blanket over the bowl and set aside. Let the dough rise for two hours before preparing the pizza.
Once the dough is ready, drizzle some olive oil in a frying pan and heat over a medium/high flame. Add in the onion slices and saute for about a minute, stirring continuously to cook evenly. Mix in the anchovies and continue to saute for another minute. Make sure to keep stirring so that the onion slices do not burn.
Next, add in the tomatoes and lower the heat to a low flame. Sprinkle some sea salt and black pepper and mix together. Continue to cook over a very low flame, stirring occasionally for about 15 minutes, while you prepare the pizza dough.
Preheat the oven to 400°F. Cover a deep baking pan with parchment paper. Drizzle some olive oil over the parchment paper and spread so that it cover all of the paper.
Remove the blanket and saran wrap from the dough to allow it to rise a bit more. Drizzle a little bit of olive oil over the dough and remove from the bowl. Place into the baking pan and stretch it to cover the bottom of the pan, using your hands.
Spread the toppings over the top of the dough. Sprinkle some breadcrumbs on top and top off with a little drizzle of olive oil.
Place the Sicilian pizza into the oven for 25 minutes. After 25 minutes, raise the oven temperature to 450°F and continue to bake the pizza for another 10 minutes. Remove from the oven and let sit for about 5 minutes. After 5 minutes, place on a cutting board and slice your desired amount. Enjoy! Salute and cin cin!
