Hello Everybody! Today I am sharing with you this comforting lentil soup with spicy Italian sausage recipe. The lentils will help you stay full longer and combined with the spicy Italian sausage, the soup is packed with flavor in every sip. It’s also a great way to warm yourself up on a cold winter day or night. Also, I recommend cooking the pasta separately from the soup so that everyone can add the amount of pasta they prefer to their dish and so that the pasta isn’t overcooked in the soup.
Ingredients:
- 10 cups Chicken Broth
- 1 1/2 cups French Green Lentils
- 1 lb. Hot Italian Pork Sausage, casings removed
- 3 Carrots, peeled and chopped
- 4 Celery Ribs, chopped
- 1 Small Yellow Onion, chopped
- 5 Golden Yukon Potatoes, cubed
- 4 Sprigs of Thyme
- 1 Bay Leaf
- Handful of Parsley, chopped for topping
- 1 cup Tubeti
- Extra Virgin Olive Oil
- Salt, to taste
In a large pot, add a drizzle of olive oil and warm up over medium to high heat. Once the olive oil is hot, add in the sausage. Continuously mix the sausage while breaking it into smaller pieces until the sausage is browned.
Add in the chopped onion, carrots and celery and sauté for about five minutes, making sure to stir occasionally so that nothing burns.
Pour in the chicken broth and let cook for another five minutes. Add in the lentils and potatoes and season with a pinch of salt. Mix all together.
Place the thyme and bay leaf in a mesh cooking infuser and dip into the soup. This helps to enhance the flavor of the soup without having to fish out sprigs of thyme from the soup later on. Cook the soup for thirty minutes over medium heat, stirring occasionally.
Cook the pasta in a separate pot of salted water as per the package instructions. Drain and set aside.
Once the soup is done cooking, add your preferred amount of pasta to a bowl and then scoop in as much of the soup as you like. Add a sprinkle of freshly chopped parsley and enjoy! Salute and cin cin!
