Start by removing fresh basil leaves from the stems. Rinse all four cups of basil leaves to remove sand and dirt. Place leaves on a towel/rag and pat dry, or watch my video to see my method of removing the water from the leaves. Put the basil leaves, garlic cloves, hot red chili pepper’s, pecorino cheese, and 1 cup of olive oil into a blender. Blend on high until fully blended. Once blended, pour mixture into a bowl. Add one cup of olive oil into empty blender to remove any leftover mixture off the sides of the blender and pour it into the bowl. Add a pinch of salt, stir and taste. Add more salt if needed. Add pine nuts and stir. Pour the sauce into a sealable container for later usage. Add about another ounce of olive oil to the top of the sauce in the container. Seal or serve over cooked pasta!

Tips:

Remove the stems off of the pepper before blending.

If you are not used to eating spicy food, I recommend you only use 1 to 2 medium sized hot red chili pepper’s for this recipe!

Freshly picked basil leaves give a better taste to the pesto.

If you rather have a completely smooth sauce, blend the pine nuts as well.
