Onion Puree Soup Recipe

Hello Everybody! When it is cold and snowy out, all I want is a bowl of yummy, hot soup to keep me warm. Today I am sharing with you my delicious onion puree soup recipe. Full video below, followed by the written recipe. Enjoy!

Ingredients:

  • 3 yellow onions, chopped
  • 2 red onions, chopped
  • 2 potatoes, cubed
  • 3 cloves of garlic, halved
  • 1 Oh Yeah Baby (hot chili pepper), chopped
  • 3-4 sprigs of thyme
  • 1/4 cup olive oil, extra virgin
  • salt, to taste
  • gruyere cheese, shredded
  • 4-5 cups chicken broth (I used homemade)

Begin by adding the onions, garlic, oh yeah baby, and 1/4 cup of olive oil to a pot and caramelize over low heat. At the same time, heat up your chicken broth in a separate pot. Occasionally stir the onion mix for about 30 minutes until caramelized and then add the potatoes and thyme.

Continuously stir all together for 2 minutes and then add the chicken broth to the pot. Cook over low heat for about 15 minutes to cook the potatoes. Remove the thyme sprigs and pour into a blender. Blend until fully pureed.

Pour into onion soup crock bowls and top with as much gruyere cheese as you like. You can also use mozzarella cheese if you prefer, or no cheese at all.

Place in the oven and broil until the cheese has melted. Serve with a side of garlic bread and enjoy! Cin cin!
