Spaghetti Garlic and Oil with Anchovies and Capers

Adding just two ingredients for a flavorful twist to a classic dish, this Spaghetti Garlic and Oil with Anchovies and Capers is just as easy and quick to make!

Spaghetti Garlic and Oil with Anchovies and Capers

Ingredients:

  • 6 oz. Spaghetti
  • 4 Garlic Cloves, sliced
  • 1.5 oz. Anchovies
  • 3 tsp. Capers
  • 3 Dried Hot Peppers
  • Extra Virgin Olive Oil
  • Handful Parsley, chopped for topping

Bring a large pot of salted water to a boil. Once boiling, add in the spaghetti and cook as per the package instructions. Reserve one cup of the pasta water.

Meanwhile, add a large drizzle of olive oil to a frying pan and heat over medium to high heat.

Add in the garlic and sauté for two minutes or until lightly golden over medium heat.

Add in the anchovies, capers and hot pepper. Lower the heat to low and sauté for about five minutes, making sure not to let the garlic burn.

At this point, the spaghetti is ready. Strain the pasta and add it into the garlic and oil pan. Mix together over low heat and then add in a ladleful of the pasta water. Mix together again. If needed, add another ladleful of pasta water.

Serve with a sprinkle of chopped parsley on top. Salute cin cin!
