- 4 hard boiled potatoes cubed
- 1/4 cup chopped scallions
- 1 zucchini (chopped into small cubes)
- 1 green bell pepper (chopped into small cubes)
- 1 sweet red bell pepper (chopped into small cubes)
- 6 eggs (1 egg per person)
- 2 Tbsp oil
- salt and black pepper to taste
