Ingredients

  • 16 Shrimp peeled, cleaned, deveined, and pat dried
  • 4 Scallops washed and pat dried
  • 8 Garlic Cloves minced
  • 3 Tbsp. Butter
  • Red pepper flakes to taste
  • 1/2 cup Dry White Wine
  • 2 oz. Lemon Juice
  • 1 cup Plain Breadcrumbs
  • Salt to taste
  • Olive Oil
  • 2 Tbsp. Fresh Parsley chopped

Instructions

Prepare the Scampi Sauce:

  • Heat a little olive oil in a pan. Add minced garlic and sauté until fragrant.
  • Add butter and let it melt. Sprinkle in some red pepper flakes for a kick. Be careful not to brown the garlic.
  • Pour in white wine and squeeze in some fresh lemon juice. Let it simmer until the sauce thickens slightly.

Prepare the Shrimp and Scallops:

  • Preheat your oven to 400°F.
  • While the sauce simmers, season the breadcrumbs with salt and parsley.
  • Coat shrimp and scallops with the breadcrumbs. Place one scallop and 4 shrimp on individual scallop baking dishes or place them all on a larger baking dish.

Assembly:

  • Pour the scampi sauce over the shrimp and scallops in the baking dish.

Baking:

  • If using individual baking dishes, place them all on a baking sheet and add a little water to the bottom of the baking sheet to keep everything moist.
  • Bake in the preheated oven for about 15 minutes or until the seafood is cooked through and golden.

Serve:

  • Remove from the oven and let it cool slightly.
  • Serve the shrimp and scallops scampi with crusty bread to soak up the delicious sauce.
