Spaghetti alla Gricia

Hello Everybody! Today I have another simple and quick recipe for you. This Spaghetti alla Gricia Recipe will take you under 20 minutes to prepare and tastes delicious! Ingredients:

  • 8 oz. guanciale**, cubed
  • pecorino cheese, freshly grated
  • 1 lbs. spaghetti
  • black pepper, to taste
  • salt, to taste

Bring a pot of water to a boil. Add a pinch of salt and the spaghetti and cook as per the package instructions. While the pasta is cooking, add the guanciale to a deep skillet and fry over medium/low heat for about 5 minutes, making sure to stir to cook  evenly on all sides. I like to cook the guanciale until it is crispy.

Once ready, add two ladles of the water the spaghetti is cooking in into the skillet and mix with the guanciale. Cook for another 5 minutes over a low flame/heat.

Drain your spaghetti and add directly into the skillet and mix with the guanciale. Add some fresh black pepper on top and mix. Serve with a sprinkle of freshly grated pecorino cheese on top. Enjoy and cin cin!

** The only guanciale I could find on Amazon is expensive, so first check if your local meat market has it,  as I am sure they would have better pricing!
