Spaghetti with Fresh Tomatoes and Mozzarella Recipe

Hello everybody! Today I want to share with you my delicious spaghetti with fresh tomatoes and mozzarella recipe. This is a very simple recipe using mostly fresh ingredients, only cooking the pasta. This is especially fun to make when you can go into your own garden and pick your fresh tomatoes and basil and add them directly to the dish. Ingredients:

  • 1 lb. spaghetti
  • 1/2 lb. grape tomatoes, washed and halved
  • 1/2 cup grated pecorino cheese
  • 1/2 cup mozzarella pearls
  • handful of basil leaves
  • Sea salt

Begin by bringing a pot of water to a boil. Once boiling, add the spaghetti and sea salt and cook until al dente (1 minute less than recommended on package) or as per the package instructions.

While the pasta is cooking, cut the tomatoes in half. You can also use fresh plum tomatoes and cut them into bite size pieces.

Next, add the pecorino cheese to a bowl and then scoop one ladle of the boiling pasta cooking water into the bowl. Stir quickly to form a thin paste. You may need to add another half ladle to one ladle of boiling pasta water.

Strain you pasta and then add directly into the bowl of pecorino and mix. Next, add the tomatoes and mozzarella. Rip up the basil leaves with your hands and then mix all together. Serve with a little more of grated pecorino cheese on top and enjoy! Cin cin!

  2. I make this with fresh Jersey Tomatoes, we call it Spring Sauce. Never made it with mozzarella balls though, but will try it next time. Looks delicious!
