Zucchini Noodles with Fried Scallops Recipe

Hello Everybody! Today I have a simple and delicious zucchini noodles with fried scallops recipe to share with you all. Watch the video below to follow along as I cook this recipe in real time or keep scrolling for the written recipe.

Ingredients:

  • 4 zucchini, washed
  • 4 plum tomatoes, peeled and chopped, seeds removed
  • 2 cloves of garlic, sliced
  • pecorino cheese
  • 18 scallops, rinsed
  • 6-8 Tbsp. olive oil
  • 2 Tbsp. butter
  • black pepper, to taste
  • sea salt, to taste

Begin by warming up a deep skillet over a low flame. In the meantime, start slicing your zucchini noodles. Slice only until you reach the seeds at the center of the zucchini. Make sure not to add any salt to the zucchini or else it will make it watery. Once you are done slicing, add 3-4 Tbsp. of olive oil and the garlic to the deep skillet and fry over a medium/low flame for about a minute, making sure to not let the garlic burn. Next, add the zucchini noodles to the skillet and mix with the garlic and oil. Cook for 2 minutes and then mix in the tomatoes. Continue to cook for 7 more minutes, making sure to stir  occasionally.

In a separate frying pan, add 3-4 Tbsp. of olive oil and place over a low flame. After rinsing your scallops, lay them on a paper towel and cover with another paper towel and pat dry. Season the scallops with salt and fresh ground black pepper to your preference, and add any other spices you would like as well. Add the butter to the pan. Flip the scallops onto the other side and season them with salt, pepper and any other spices you would like. Turn the flame to medium and place the scallops onto the pan. Let fry for up to 90 seconds and then flip each scallop onto its other side and fry for up to another 90 seconds. Turn the flame off and place the scallops onto a dish.

Place the zucchini noodles onto a serving dish and shred freshly grated pecorino cheese on top. Serve in a dish with a few fried scallops and enjoy. Cin cin!
