Gnocchi Alla Romana Recipe

Hello everybody! Today I am sharing a super easy recipe that only requires a few ingredients, gnocchi alla romana.

Ingredients:

  • 2 1/2 cups milk
  • 1 cup semolina
  • 2 egg yolks
  • 4 Tbsp parmigiano-reggiano cheese
  • 2 tsp salt
  • 4 Tbsp butter
  • pinch of nutmeg

To start off, pour milk into a pot and place on stove over medium heat to bring to a boil. As soon as the milk starts to boil, lower the heat and slowly add in the semolina, whisking the two ingredients together.

Once the mixture starts to thicken, reduce the heat and continue to add semolina a whisking together. The end result should be a thick mashed potato consistency.

Turn the stove top off and add a pinch of freshly ground nutmeg for flavor. Working quickly, add the cheese and mix all together with a wooden spoon. Add the butter and continue to stir until the butter is completely melted. Lastly, mix in the egg yolks and salt.

Spread the gnocchi mixture evenly onto an oven pan and let sit for about 15-20 minutes. Use wax paper over the oven pan to easily pick up the gnocchi mixture once it has cooled off. After it has cooled down, remove the dough from the oven pan and use a bit of melted butter to grease the bottom of the oven pan to prevent the gnocchi from sticking. Use a round cookie or dough cutter to cut small circles of the gnocchi dough and place onto the oven pan.

Place the cut dough onto the oven pan and brush melted butter over each piece. Lastly, sprinkle the parmigiano cheese evenly over the dough and bake in oven at 400 degrees for about 15 minutes. Broil at 500 degrees for another 5 minutes until the top of the gnocchi is browned. Serve while still warm and enjoy!
